Whole Wheat Banana Muffins makes 12 muffins
1 C. whole wheat flour 3 mashed bananas
1 T. baking powder 1/2 C. sugar
1/2 t. baking soda 1/2 C. unsweetened apple sauce
1/8 t. salt 1 egg
2 T. ground flax seed 1/2 t. vanilla
1/2 t. cinnamon (i used a little more :) 1 t. olive oil (ish, i added a little more)
Preheat oven to 350 F. Either use muffin liners or spray your pan.
Mix all dry ingredients except sugar. Be sure to mix well! (otherwise you will have muffins of all sizes see above picture :) In a separate bowl, mix together remaining ingredients. Stir this banana mixture into the dry ingredients and mix until just combined. *I use an ice cream (or cookie) scoop to put the batter in the muffin tins. Works well.*
Bake 15 - 20 minutes. Enjoy!
These are super quick and easy to make. They are quite tasty and not dry like some whole wheat muffins can be. If you care, they are 3 weight watchers plus points each. They could be sweeter, so if someone has a low cal idea of how to do it, please let me know!!
