My absolute favorite item in the Ketelcopia Etsy shop is the Home Is Where the Heart Is mixed media collage! So cool!

My favorite summer recipe: Go to the store. Buy a giant watermelon. Cut it open. Eat the fruit and spit out the seeds. Yum! (I hope that counts!)

I love to make Herbal Sun Tea in the summer.
ReplyDeleteI usually grow Lemon Balm , Lemon Verbena and Pineapple Sage . I add a few sprigs of those three, some thyme and as many green tea bags as desired. I add water in a gallon size glass Container. This can be left outside for a few hours before enjoying over ice.
I also steep Rosemary in Wine and enjoy a few glasses in the evening.

My favourite summer recipe: Raspberry Summer Sensation
ReplyDeleteEasy peasy.
Ingredients:
-1 pint raspberry sorbet or sherbet
-1 cup cold milk
-1 pkg. (4 serving size) JELL-O Vanilla Flavor Instant Pudding and Pie Filling
-1 (8 ounce) tub COOL WHIP Whipped Topping, thawed
-1 cup raspberries
Steps:
1. Line 9x5-inch loaf pan with foil. Spoon sorbet into pan; freeze 10 minutes.
2. Pour milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 minutes or until well blended. Gently stir in whipped topping. Spread pudding mixture over sorbet in pan.
3. Freeze 3 hours or overnight. To unmold, invert pan onto plate; remove foil. Top with raspberries just before serving. Let stand 10 to 15 min. to soften before cutting into 12 slices.
(12 servings)

ReplyDeleteTake a whole melon, scoop out the seeds and pulp and collect the juice through a sieve. Take a pitcher half filled with water and pour in the juice. Scrape the melon flesh with a tool that produces melon "threads" and put that into the pitcher. Add sugar to taste and tons of ice!

ReplyDeleteGreen Mango Salad
Ingredients:
1/3 cup (75 mL) chopped cashews or peanuts
2 unripe mangoes (2 lb/1 kg total)
1/3 cup (75 mL) each chopped fresh coriander and mint
2 tbsp (25 mL) lime juice
4 tsp (20 mL) granulated sugar
4 tsp (20 mL) fish sauce
1 tbsp (15 mL) vegetable oil
1/4 tsp (1 mL) Asian chili sauce or hot pepper sauce
1 sweet red pepper, thinly sliced
1 cup (250 mL) thinly sliced red onion
In skillet or toaster oven, toast cashews over medium heat until fragrant and golden, about 8 minutes; set aside.
Cut pointy ends off mangoes. Set each mango on cut end. Using serrated knife, cut off peel. Cut flesh on either side of flat pit into thin slices; stack and cut into thin strips.
In bowl, whisk together coriander, mint, lime juice, sugar, fish sauce, oil and chili sauce. Add mangoes, red pepper and onion; toss to coat. (Make-ahead: Cover and refrigerate for up to 2 days.) Sprinkle with cashews.

Summer recipe
ReplyDeleteMexican-Style Summer Salad
Avocado adds wonderful substance to this refreshing salad flavored with lime and a hint of cumin. If desired, substitute jicama, peeled and cut into sticks, for the cucumber slices.
3 Tbs. fresh lime juice (1 large lime)
1/2 tsp. plus 1/8 tsp. salt
4 small tomatoes, cut into 3/4-inch dice
(2 1/2 cups)
3 medium Haas avocados, cut into
3/4-inch dice (2 cups)
3 scallions (white and light green
parts), thinly sliced
1 large clove garlic, minced
1 Tbs. mild olive oil or vegetable oil
1/4 tsp. ground cumin
2 medium heads Boston lettuce, torn
into large pieces (8 cups)
1 small cucumber, peeled, quartered
lengthwise, seeded and
thinly sliced diagonally (1 cup)
2 Tbs. coarsely chopped fresh cilantro
In medium non-metallic bowl, whisk together 2 tablespoons of lime juice and 1/2 teaspoon of salt. Add tomatoes, avocados, scallions and garlic. Using rubber spatula, gently fold to combine. Season to taste with pepper and set aside.
In large bowl, whisk together oil, cumin, remaining 1 tablespoon lime juice and 1/8 teaspoon salt. Add lettuce and toss. Season with pepper. Divide lettuce among plates. Top each with mound of avocado mixture. Sprinkle with cucumber and cilantro and serve.

An easy-peasy summer recipe hit is for shrimp dip. Mash a block of cream cheese with a fork, mash in a (drained) can of tiny broken shrimp and add your favorite thousand island dressing until it's to your taste. You can substitute crab or imitation crab meat. Serve with crackers or dip chips. If you use chips, thin it out a bit more with the dressing.

My favorite summer recipe has to be home made ice cream! For the detailed recipe, I posted our adventure on my blog. Mix vanilla, eggs, milk, sugar and extras like mint or food coloring in a can w/ice and shake your booty for 10 mins. Then...enjoy! Yum.
